臼と杵、ひき臼
Mortars, mallets, and mills

　穀物の脱穀や精白・製粉の用具として臼と杵は弥生時代から使用されており、大正時代まではどこの家にもあったと言われています。このつき臼が進歩したのが踏み臼や水車です。木臼で搗き種皮をはがしたソバ、キビ、コムギ等は石臼で粉挽きされますが、この臼は飛鳥時代に伝来したといわれています。石臼で挽ひかれた粉はうどんやそうめん、そば、きな粉、豆腐等になりました。これらの道具は大正末期から昭和初期まで利用され、その後は動力製粉機に替わりました。

　Wooden mortars and mallets (beater) to separate grains from hull or chaff had been used since the Yayoi Period and it is said the most of the families in Japan had one until the Taisho Period.  Later the device was developed into water mill in which beaters are vertically raised and dropped onto mortars by hydraulic power.  After hull or chaff is removed, grains are ground in stone mills, which are cooked to be served as typical Japanese food such as soba, udon, somen and tofu.  These devices were used until the early 20th century.
